Healthy High-Protein Tuna Surprise Lunch Recipe

Tuna surprise will be your go-to lunch. Not only is it delicious, but it is also packed with protein. Serve it as a dip with corn chips or make it into a sandwich. You can also make it ahead, as it saves well for an easy-to-pack lunch on the go. It is a family favorite in our house, and we love to eat it outside on a picnic blanket.

Tuna surprise is an easy recipe to put together and easy to modify if there is an ingredient you do not care for. I like to keep the ingredients that go into it on hand to make it up when I need a quick lunch. I prefer to make a double batch so I have plenty for the day I make it and some for the following day. 

Ingredients

1 can of solid white Albacore tuna or other canned tuna

1 cup cottage cheese

1/4 cup chopped celery 

1/4 cup chopped green onions

2 hard-boiled eggs, peeled and chopped (optional)

​1 Tablespoon parsley flakes

​1 Tablespoon minced dried onions

​1 teaspoon lemon pepper

1 teaspoon soy sauce

1/4 cup mayonnaise 

Needed supplies

Canned Tuna Options

Any canned tuna will work for this recipe, but I have found some brands I like better than others. I prefer to use wild Albicore tuna from the Wild Planet brand. As it has a great flavor and is a healthier option than regular canned tuna. 

Cottage Cheese

Any cottage cheese will work in this recipe, small curd or regular, either will work well. I try to buy whole cottage cheese from grass-fed cows when I can find it, but low-fat works as well and doesn’t make a difference to the flavor. 

Picky Eaters 

I make this recipe for guests and for my children. Occasionally, I have a guest who does not like celery or a child who doesn’t like anything green in their food. It is easy to adapt this recipe and remove the celery or green onions if you prefer, or if you have someone who doesn’t like them. It is also easy to remove a portion for your guest before you add the ingredients they don’t like. 

I have found that with my own children, I have had two who didn’t like the celery, so I used to set their portion aside and then add the celery to the rest. Now I just leave the celery in it, and my picky children have slowly gotten used to it and no longer complain. 

Serving Options

You can serve your tuna surprise with chips as a dip, or you can spread it onto bread and make a sandwich. Place in an airtight container for a healthy, high-protein lunch on the go.

Step-By-Step Instructions

  1. Gather your ingredients. Finely chop the celery and green onions. Open the tuna. If using albacore tuna from Wild Planet, do not drain the liquid; fluff with a fork, and add to the bowl. Peel and chop the hard-boiled eggs. Place all ingredients in a medium-sized bowl. Process shot of all ingredients being added to a medium size bowl.
